- 4 beef short ribs

- 4 garlic cloves, minced

- 2 sprigs fresh rosemary
Instructions:
- Preheat your oven to 325°F.
- Season the beef short ribs with salt and pepper.
- Heat the olive oil in a Dutch oven over medium-high heat. Add the short ribs and sear them on all sides until browned, about 8-10 minutes. Remove the short ribs from the pot and set them aside.
- Add the onion, carrots, celery, and garlic to the pot and sauté until the vegetables are soft, about 5-7 minutes.
