Recipe for Braised Beef Short Ribs with Red Wine Sauce

Ingredients:

• 4 beef short ribs
• Salt and pepper
• 2 tablespoons olive oil
• 1 onion, chopped
• 2 carrots, peeled and chopped
• 2 celery stalks, chopped
• 4 garlic cloves, minced
• 2 tablespoons tomato paste
• 1 bottle of Joseph Drouhin Bourgogne
• 2 cups beef broth
• 2 sprigs fresh thyme
• 2 sprigs fresh rosemary

Instructions:

1. Preheat your oven to 325°F.
2. Season the beef short ribs with salt and pepper.
3. Heat the olive oil in a Dutch oven over medium-high heat. Add the short ribs and sear them on all sides until browned, about 8-10 minutes. Remove the short ribs from the pot and set them aside.
4. Add the onion, carrots, celery, and garlic to the pot and sauté until the vegetables are soft, about 5-7 minutes.
5. Stir in the tomato paste and cook for another 2-3 minutes.
6. Add the Joseph Drouhin Bourgogne to the pot and bring it to a simmer. Let it cook for a few minutes to allow the alcohol to evaporate.
7. Pour in the beef broth and add the thyme and rosemary sprigs. Return the short ribs to the pot.
8. Cover the Dutch oven and place it in the oven. Bake for 2 1/2 to 3 hours, or until the meat is tender and falling off the bone.
9. Remove the short ribs from the pot and strain the sauce through a fine mesh sieve. Discard the solids and return the sauce to the pot. Simmer the sauce for a few minutes to thicken it up.
